By the way, I learn something every day - today it's that Saudi has ostrich farms.

I've had ostrich a couple of times, and I've yet to be particularly impressed. It has a slightly muddy flavour. I think I need to find a specific sauce to bring it out: maybe something very rich and fruity with a sharpness to cut the ostrich flavour?

There's also a Roman recipe I might try some time, which involves a whole host of things from honey to fish sauce.

SD, maybe a kind of sauce that goes well with venison would do it - there's a juniper one I recall, and one based on redcurrants.

I've never tried ostrich - I've had emu and I won't bother again.
